“Galets” Soup: A Classic
This is a traditional Christmas recipe, where the main ingredient is “galets,” symbolizing well-being and abundance for the upcoming year.
Ingredients (for 4 people):
• 2.5 liters of water (adjust according to the broth you need)
• 400 g of large “galets” (traditional Christmas pasta)
• 1 beef bone (300 g)
• 1 chicken breast (300 g)
• 100 g of beef stew meat (optional)
• 1 small pork leg (optional)
• 2 carrots
• 1 leek
• 1 celery stalk
• 1 onion (peeled and quartered)
• 1 ripe tomato (unpeeled)
• 1 bay leaf
• A few sprigs of parsley
• 2 cloves of garlic (unpeeled)
• Salt and pepper to taste
Preparation:
1. Place the chicken breast, beef bone, pork leg, and beef stew meat in a large pot. In our store, you can find cookware from Le Creuset, Cristel France, and others.
2. Peel and slice the carrots, leek, celery, and onion into large pieces. Cut the tomato in half and add it to the pot unpeeled.
3. Add the bay leaf, parsley, whole garlic cloves, and a bit of salt and pepper.
4. Cover the ingredients with water, bring to a boil over high heat, and let simmer for 2-2.5 hours.
5. Strain the broth through a fine colander to separate the bones and vegetables.
6. Return the broth to the pot and cook the “galets” according to the package instructions (usually 8-12 minutes).
7. Serve the Christmas soup hot, adding some shredded meat and vegetables to taste. Garnish the dish with a touch of extra virgin olive oil and some fresh parsley.
Stuffed Turkey: The Main Course

Turkey is a festive dish to share with family and friends. The secret lies in the stuffing and cooking to ensure it’s tender and flavorful.
Ingredients (for 4 people):
For the turkey:
• 1 turkey (approximately 2.5-3 kg)
• 4 tablespoons of extra virgin olive oil
• 2 tablespoons of butter
• 1 large onion, quartered
• 1 carrot, sliced
• 1 celery stalk, chopped
• 1 head of garlic (halved, unpeeled)
• 1 sprig of rosemary
• 2 bay leaves
• 1 glass of white wine or dry vermouth
• 2 glasses of water (approximately 500 ml)
• Salt and pepper to taste
For the stuffing (optional):
• 200 g ground pork
• 100 g ground beef
• 1 small onion, chopped (you can use Chroma France knives)
• 2 garlic cloves, chopped
• 1 egg
• 50 g raisins
• 50 g pine nuts
• 2 cups of bread (toasted or cubed)
• 1 glass of turkey or vegetable broth
• Salt and pepper to taste
Preparation
Preparing the stuffing:
1. Add a drizzle of olive oil to the pan and sauté the onion and garlic until golden. Add the ground pork and beef, raisins, pine nuts, and bread. In the store, you can find Norbert Woll pans to prepare this recipe.
2. Let the stuffing cool before filling the turkey.
Preparing the turkey:
1. Preheat the oven to 180 ºC (350 ºF).
2. Clean the turkey thoroughly and pat it dry. Place it in a large roasting pan. Fill the turkey cavity with the stuffing if using. If not, fill the cavity with fresh herbs like rosemary and bay leaves.
3. Add the onion, carrots, celery, and garlic around the turkey in the pan.
Roasting:
1. Add white wine and water to the pan. Cover the turkey with aluminum foil. Place the pan in the oven and cook the turkey for 2.5 to 3 hours.
2. Baste the turkey with the juices from the pan to keep it moist. Add a little water or wine if necessary.
3. Remove the foil when the turkey is cooked and increase the temperature to 200 ºC (400 ºF) to brown the skin for another 15-20 minutes.
4. Let it rest for 15 minutes, and it’s ready to serve.
