How to make basil pesto?
First we must separate the basil leaves from the stem, this is not used because it can bitter the flavor. Next, it is very important that we wash and dry them consistently by pressing lightly with absorbent paper. Basil is a very delicate plant that oxidizes very easily and any drop of water or tear can cause a color change in our pesto.
While the basil leaves are drying, peel the garlic cloves, cut them in two and remove the germ. We put the pine nuts in a frying pan without oil, so that they are toasted. We place all the ingredients in the glass of the food processor, with half the oil and a pinch of salt, and blend.
When pieces of pine nuts and basil are no longer visible, we stop grinding to add the rest of the oil. We grind again to integrate the oil, and we now have our delicious homemade basil pesto.
